Eatin’ Clean in the Summertime

Is the weather driving you crazy over the summer? You’re either melting away from the scorching heat in one area, or suffering through severe storms in other areas.

It’s mid-July in California and we are right smack in the middle of a hot summer. However, right now is the best time to get your health on track before the busy school days start again in the fall. Fresh and seasonal fruits and vegetables are abundant at this time of year, and it’s a great opportunity to get important nutrients in your body. Typically around the months from May-August, the sweetest fruits and the crispiest vegetables are in season, and eating clean is a wonderful way to get your health back in gear.

In the west coast with the sweltering heat it can get difficult to cook a homemade meal. I’m not a fan of grilling outdoors or even cooking over a hot stove when it’s over 85 degrees. I don’t even try to plan meals during the summer because we’re either working, traveling, or getting ready for school. But one thing I try to keep on track is eating healthy. It doesn’t really matter what time of year or the season, because eating healthy helps keep my energy up and running. If I can dedicate just 5 meals in the week to eating healthy, I’m aligned to my personal health goals. It might not be easy to eat clean and healthy when you’re busy, but it’s crucial to maintaining a healthy lifestyle.

So what exactly does clean eating mean? Simply defined, clean eating is eating food that is unprocessed, preservative-free, and made with as few ingredients as possible. While many foods in the markets today are processed, the key is to avoid or limit overly processed foods as much as possible. Below are some steps to eating clean in the summertime and beyond. Keep track of what you eat in the summer so you can continue with a clean and healthy journey through all seasons.

5 steps to eating clean in the summer:

1- Buy fresh produce – organic and locally grown when possible. Fresh produce is the number one rule to eating clean and simple. Check out EWG’s Dirty Dozen and Clean Fifteen on the most and least toxic produce: https://www.ewg.org/foodnews/dirty-dozen.php

2- Buy whole grains and lean protein. Whole grains are still intact with all of their nutrients ensuring you’ll get all of the health benefits. Lean protein with little to no fat are not as taxing on your body when digesting and processing through your system.

3- Make meals and snacks from scratch at home. When you start with ingredients that you are in control of, you know what you’re putting in your food.

4- Use as few ingredients as possible. The risk of eating out or buying cooked food in stores is because of all the ingredients in there that companies need for flavor and preserving. When you make your own food, use just the basics – lean protein, vegetables, and seasonings that fit your lifestyle.

5- Limit sugar or cut it out entirely. While cutting out sugar entirely might be hard to do, try eating more fruits and using fruit-based sweeteners to sweeten your food.

Teach your children to eat clean and healthy:

1- Take your child to the grocery store with you. Let them start by learning about all the fresh produce that are available. If the stores have samples of the produce, encourage your child to try it out if it’s a fruit or vegetable that they typically don’t eat.

2- Depending on the age, have your child help you prepare the meals at home. Teach them and let them help you cut up from the fresh produce you just bought at the store. When children are involved in making meals from scratch, they feel a connection to the food they eat.

3- Serve up fresh fruits and cut them up in cute shapes if necessary. Mix it up once in awhile by including honey (for children over age 2) or plain yogurt for kids to dip their fruit in. Continue with this style of snacking so kids can learn to grab fresh fruits instead of an overly processed sugary snack.

4- Teach your kids to be mindful of what they eat. Don’t be distracted by the TV, tablet, or phone while you’re eating. Being mindful is an ancient practice to be more aware of what you are eating and how food should taste. It also helps with proper digestion of food.

5- Use simple recipes when it comes to teaching kids to eat clean. The less ingredients used, the more their taste buds can distinguish between processed food and food made with less ingredients.

6- Teach your children to read labels. If your child likes a certain store bought food, let them read the ingredient label as well as the labels on the packaging. If it’s a snack that isn’t all too healthy, let them see how many unpronounceable words there are in the ingredients list. You’d be surprised at their reactions to all the ingredients that they don’t recognize.

How to eat clean and healthy in restaurants:

1- If you can choose the restaurant, then choose one you regularly frequent. This way you already know what’s on the menu and how the restaurant and staff works.

2- If you know the name of the restaurant you’re attending (but you didn’t choose it), look at the menu online so you can get an idea of what’s available.

3- Get to know your server. The servers at restaurants are usually very accommodating. Peruse the menu first and ask the server ahead of time if they allow changes or alterations to the menu items. If they do, then know ahead of time what you’d like to order. If they don’t then just stick with the basics, such as a fresh salad, dressing on the side, and a fruit plate if it’s available. Then if the server brought out your dish accurately, be sure to tip well as they usually have to be specific with the chefs and food preps.

Whether you’re just starting to eat more clean or you’re a seasoned pro, remember to have a plan on how you want to eat clean. Make grocery lists, search online for ideas and tips such as mine, and have self control over what you eat.

The Garden of Eatin’

The art of agriculture began many many years ago, even as early as the onset of the Ice Age. It is one of the most innovative invention to have ever been brought to human beings. Even certain animals perform some type of agriculture or farming, telling us that this very crucial form of food production benefits all living beings. As early as mankind, people had the will and knowledge to grow their own food and eat what they grew. There wasn’t a magical bean or a magical anything. It was a simple desire and need to eat healthy food that you were very much in control of.

As agriculture grew so did the change of domesticated agriculture. The need to save money in households branched out to growing food in homes, instead of purchasing them in stores. As people started growing more food they realized the many health benefits that went along with it. Now, many centuries later we learned that healthy foods promote healthy minds and bodies for all ages.

My love for gardening began at a very young age. Both my parents were avid gardeners, and with my dad’s farming background he taught all of his children the basics of gardening and growing your own food. My childhood home had a huge backyard, with an abundance of fruit trees, flowers, and rare plants. What I learned from my childhood eventually led me to teaching children the benefits of being in nature and growing their own food. It doesn’t take a green thumb or acres of land to grow what you eat. All it takes is some patience, the will to learn, and basic knowledge of plant life.

If you want to start your own garden filled with luscious fruits, vegetables, and flowers, then follow these 10 important steps to help you get started.

1- Location, location, location. Where you live depends on what you can grow. Different climate, and your growing zone relies heavily on how successful your crop will be. For the US, check out the USDA’s website to find your growing zone and the definitions on what you can grow: https://planthardiness.ars.usda.gov/. If you’re in other countries, you can do an online search on your growing zone as well. Knowing what your climate zone is and the best plants to grow, will help your garden thrive and eventually feed your family.

2- Grow what you eat. If you’re just starting out on gardening and horticulture, decide on what your family will eat. While many plants are easy to grow they might not be suitable for your family. If your family eats a lot of vegetables then find vegetables that are suitable to your area. This helps reduce waste (but really, who would waste delicious, home grown crops!), and can determine what your family likes best.

3- Differences between seeds and seedling plants. The most economical way of gardening is to grow from seeds. But most seeds take a lot of time to get from germinating (sprouting) to seedlings, to full grown plants. But the joy of growing from seeds is watching your seeds grow into full grown plants! Seedlings, or baby plants you find at nurseries or wherever plants are sold, are plants that are already developed and are maturing. Plant these seedlings outdoors in-ground, or in planters for better growth potential. If you do start off with seeds, be sure to read the seed packet instructions and take time to understand what you’re growing. Remember that growing anything indoors or outdoors take a lot of patience, and trial and error.

4 – Walk around plant nurseries, arboretums, and gardening events. I learned a lot about gardening from my parents, but once the gardening bug bit me I invested a lot of time visiting garden nurseries, arboretums, and sometimes special gardening events where you can talk to professionals and see rare plants. One of the best ways to learn about gardening is to learn about various plants, how they grow, and what their temperament is. Yes, plants have personalities and their own temperaments!

5 – Pick the right plants to grow. This rule of thumb correlates with your local planting zone, and what you plan on growing. Are you growing a garden full of edible plants? Or a garden filled with beautiful and bright flowers? Or a mixture of everything? When you decide on what you want to grow, it’s okay to mix a variety of plants such as easy to grow vegetables and fruits, and flowering plants. Many flowering plants attract beneficial pollinators which will in turn help your eating garden thrive.

6 – Attract pollinators. A pollinator is a blessing to nature. Without beneficial pollinators many of our edible plants won’t grow well. A pollinator is an insect or animal that carries pollen from one plant to another. The purpose of pollinating a plant is to help the plant grow from seed to an adult plant. It is a type of fertilization of plants which will eventually determine if a plant can grow successfully or not. Nature is wonderful in that every living organism knows its own job or duty. Pollinators such as bees, butterflies, birds, and even wind, helps the eco system thrive and change in nature. Some plants can self pollinate, but most plants need pollination from some form of pollen carriers – such as an insect, wind, or hand pollination. To attract beneficial pollinators, be sure to grow plants that benefit them, so that you invite them into your garden. Pollinators thrive in your garden, and they help your garden thrive.

7 – Use good soil. Soil for plants is like the organs in our body. Soil provides the necessary nutrients to help your plants grow and thrive. The type of soil for your plants is important too. If you’re starting with seeds, sow your seeds in loose soil for better air circulation and emergence of the seedlings. Seeds are tiny and compact, and if the soil is too tight then they will have a difficult time to push through the soil to germinate. You can use a special seed starting soil mixed in with potting soil. If growing seedlings or baby plants whether in-ground or in pots, use high quality soil such as potting soil mixed in with some peat or coconut coir.

8 – Mark your seeds, plants, and keep a journal. It’s important to label your plants whether they are growing in pots or directly in the ground. Labeling your plants can help you identify them as they grow, especially if you’re growing a large amount. Journaling, or some form of garden journal helps you gain valuable insights on how plants grow and the success and failures during the growing process.

9 – Buy organic seeds and seedlings. Organic seeds and seedling plants are grown using stringent organic methods. Organically grown plants are healthier and cleaner for you and for the environment. You can easily find organic seeds and seedlings in your garden center and nurseries.

10 – If at first you don’t succeed, try again. A gardener is much like a parent. And in that sense you are the plant’s parent. Watching your seeds or seedlings grow into adult plants is a wonderful journey. Some plants grow prolifically, while some plants don’t thrive completely. Don’t give up though! Growing a garden is trial and error and can take many years of experience and knowledge to really get things going. Write in your garden journal, support local nurseries and farms, and have fun along the way.

Easy Ways for Kids to Start a Summer Garden

Summer is a great time to start a garden with children. With some free time before school starts, children can get a good harvest going before the fall and winter seasons. While temperatures are conflicting around the world, you can still find the right type of plants to grow in the summer and be ready for a hearty harvest in a couple of months.

My love for gardening and nature developed at a very young age. I thank both my parents for that because now I teach gardening to children at an elementary school and hope to instill in them a love of nature too. Whether you’re a beginner or an avid gardener, getting kids started at a young age gives them a chance to learn and grow at their own pace. Nature has no judgement and will in fact, bring you an abundance of joy and satisfaction for many, many years.

To get kids started in gardening, you must know the basics. The fundamentals of gardening helps develop good habits that leads to better understanding and less frustration. If you and your children already have a garden full of lovely plants, then that’s awesome. If not, or you’re just starting out, check out some easy tips to get you started on a lifetime of healthy living.

10 BASIC GARDENING TIPS:

1 – Decide on your garden space. Do you want a small patch of land in your yard? Do you want only planters?Or do you want a mixture of ground and raised? Once you decide on the type of garden you want, you can start planning!

2 – Decide on how much you want to invest in your garden. If you’re just starting out, it’s easier to start on a small budget. Any range between $50-$100 is a good starting point.

3 – Have your kids research on the type of plants they want to grow. Depending on their age, they can start with very basic and easy to take care of plants. I will list the type of plants below.

4 – Visit a garden center or big box stores like Home Depot and Lowe’s that has a garden center. Take some time to walk around and learn about the various types of plants. Touch the plants and smell them to see what you like.

5 – While at the garden center, pick up some easy to grow plants: mint (any type), tomatoes, cucumbers, cabbage, radish, sweet snap peas, bell peppers, daisies, sunflowers, and hibiscus (seasonal).

6 – Have your kids pick out basic garden tools: small hand shovel/spade, small hand rake, gloves, bucket, watering can, and gardening soil. Many gardening tools are made for children but I recommend getting them medium sized tools so they can eventually grow into them. 7 – Find the right spot in the garden. Most plants can take full sun up to 6 hours, depending on where you live. For easy to grow plants such as the ones mentioned above, try to grow them where there’s sun for most part of the day. If you plant in planters, they are easy to move around according to the position of the sun.

8 – Don’t over or under water your plants. How do you know if you’re over watering or under watering? Check the top soil. Place 2 fingers into the soil of where you plant is. If it’s moist, then you don’t need to water the plants yet. If it’s dry or not moist, then water them immediately. Over watering plants can kill them or cause plant diseases. 9 – Buy high quality planting soil. Once you’ve decided if you’re planting directly in ground or in planters, make sure you buy higher quality soil to give your new plants a chance to grow and flourish.

10 – Tag and monitor your plants. If you’re growing from seeds, it’s very simple to watch your seeds grow from seedlings to full plants. If planting seedlings that you got from the store, place markers in the soil with the name of the plant and the date it was planted.

Un-junk your food for back to school

Growing up I wasn’t allowed a lot of junk food. Not that I didn’t want any, but because I come from a family of health experts. Meals were freshly made and snacks consisted of fresh fruit and vegetables and homemade desserts. I didn’t really know the addictive qualities of “junk food” until I started middle school. And then it all went down hill from there. Well, not anything that tragic, but the effects of what extra sugar and sodium can do to the brain led me to buying Twinkies and Doritos during lunch time at school. 

In hindsight, I truly believed that had I been allowed some junk food now and then, I might not have gone all Rambo on the sweets and chips. However, it wasn’t until I went into college that the awakening sort of happened. In college, and especially if you live away from home, you have to monitor yourself. Your self control is truly tested among other behaviors. I felt a deep lag in my own health when studying late into the night and hanging out with friends caused some health issues. I felt horrible that instead of picking up a fresh apple, I picked up an apple pie from McDonald’s instead. But when you’re still young, you don’t really think about the bad consequences of what you put into your body.

Now, many years later, and starting my own career and family, I’ve learned quite a lot on making healthy life choices. I chose to eat better and made more conscious choices. The road to my healthier preferences weren’t always pretty, but I hope the end results will be satisfying.

If you’re looking to eat better so that you’ll feel better, know that food is a direct relation to our health. I try not to fill up the house with junk food but when you see advertisements marketing towards a convenient lifestyle, you’re going to end up buying and eating something unhealthy now and then. The key however, is to limit yourself and to start off as early as possible. That is why with children, the earliest you teach them about eating healthier, the better chances they’ll have at making healthier choices when they get older. Your kids will undoubtedly get influenced by TV and online ads as well as by their friends and classmates. But if you instill a love and appreciation for eating healthier, they’ll eventually get the big picture.

So how do we un-junk our food? Let’s start with what we have in our own homes. Yes, that means you have to go to your refrigerators and cabinets and see what you have in there. Take an inventory if you must, but taking the first step to wanting to be healthier might be the hardest step.

After you’ve taken inventory of what you already have, follow these simple steps:

1 – Check the ingredients and labels. If most of the packaging has simple and natural ingredients, then you’re doing great! Avoid ingredients that have unhealthy additives such as artificial food coloring, preservatives, and flavoring.

2 – Have more fresh fruits and vegetables. We live in a country where fresh fruits and vegetables grow abundantly. Let’s not shy away from fresh and wholesome fruits and vegetables. We are helping our own bodies, our planet, and farms.

3 – Support brands and companies that provide healthier food and treats. Look for ingredients such as actual fruits and vegetables. No artificial flavors or colors, and organically grown. One of my son’s favorite organic snack brands is Wildmade Snacks (https://wildmadesnacks.com/). They make organic fruit rollups, strips, and bites and they contain only fruits and vegetables. They’re not too sweet and you can taste the various flavors.

4 – Don’t buy in bulk. Bulk food buying is really a great marketing trick. Stores advertise it and make you think you really need that 20-pound Rice Crispies cereal. If you must buy in bulk, try buying bulk fresh food such as fruits, vegetables, and lean protein including beans and lentils. Even frozen fruits will keep well in the freezer when your child needs an easy and quick lunch. Buying in bulk becomes a waste as we tend to forget we bought so much and they end up in the trash can.

5 – Find out your dietary needs. If you have certain health conditions that require you to eat or avoid certain foods, then get your list together now. If you don’t have any specific health concerns, then start off with fresh food. Always buy fresh whenever possible because there usually aren’t any artificial preservatives in them.

6 – Notice your mood. When we’re depressed, sad, or tired, our body and mind triggers warnings that we require sustanance. Easily, the most valuable and yet detrimental substances are sugar and salt. They create addictive qualities in our brains and bodies making us think we need more of them. Notice what mood you are in when hunger strikes and instead of reaching for that Twinkie (you accidentally found in your grocery cart and brought it home), munch on sliced apples with some honey or yogurt. You’re getting the sugar that fuels your brain and body and the extra nutrients and supplements that support a healthier body. This especially holds true for children. Their capricious moods are often derived from lack of proper nutrition.

7 – Give children the ability to choose. Take them grocery shopping with you now and then and show them the difference between the fresh pears and the ones in cans. Yes, fresh fruit will always be better because we don’t know how the canned versions are processed. Help them choose some new type of fruit or vegetable so they can try something new and unique.

8 – Don’t deny yourself. We might need the occassional Twinkie or donut, but let’s not make a habit out of it. Our children will most likely eat whatever is in the fridge or pantry. It’s okay to have some chips now and then or some chocolate covered peanuts. Moderation and realization is the key to a healthier life.

9 – Create a back to school food station. I have a friend that puts fresh fruit, cut up vegetables, dried fruit, and crackers in individual bins. Her older kids know they can always pack these healthier versions for school or snack on them afterschool. If you’re at home for school due to school closures, now is the best time ever to reinvent your healthier back to school meals.

10 – Investment. Just like we make investments with our money for possible future growth, we must also do so with our health. Invest in higher quality, fresher, and better for you ingredients. Your body will thank you for it now and in the future.

11 – Use recipes. While most of us are still staying home during the pandemic, we are getting more creative with our cooking skills. Have your kids help you with new recipes or teach them to cook something that they really like or that is easy to make. When kids associate cooking with their own hands, they see the end result and are more inclined to make something healthy.

No matter the stage you are in when it comes to eating healthier, know that you can make the change any time. You are inevitably in control of your health. Teach your children that they must also be in control of their own health and body. As I went from a healthy eating habit child to a not so healthy habit in college, and then finally back to being more health conscious, I’ve learned to be more intuned with my body and what it needs. Your kids can do the same. Start young and empower them to make better choices for their health and wellness.
